Fresh Herb Salad Dressing and the Weekly Menu

Warmer weather means a change in the types of foods that my body craves.  Gone are the yearnings for warm comfort meals of soups and stews.  Now, I want fresh crisp salads and beautifully grilled proteins.  This gorgeous, tangy dressing made with an assortment of fresh herbs is the perfect way to welcome in the spring.

This dressing is a wonderful topping for your salad, whether it is a side salad served with dinner or a main dish salad with added protein.

I had some leftover steak in my refrigerator that I added to my salad for a quick and tasty dinner.  It would be equally as good with chicken or shrimp.

But this dressing isn't only for salads.  Tomorrow I am sharing a recipe for Parmesan Herb Muffins that incorporates some of this dressing.  In fact, I think those muffins would make a great side to serve with the salad.

Tomorrow night we are invited to Frank's sister, Roz's for dinner.  The rest of the week is pretty quiet.  We are happy that the weather has turned and we can enjoy the pool.  Most of our meals will be eaten on the deck.  What's on your menu this week?

Fresh Herb Salad Dressing

This dressing is a wonderful topping for your salad, whether it is a side salad served with dinner or a main dish salad with added protein.

Ingredients

  • Approximately 1 cup of fresh herb leaves (I used basil, parsley, chives, and oregano).
  • 2 cloves garlic
  • juice of one lemon
  • 3/4 c. sour cream
  • salt and pepper to taste
  • 1/2 t. honey

Instructions

  1. Place the herbs, lemon juice, garlic, sour cream, and honey into a food processor and blend until smooth.
  2. Taste and season with salt, pepper, and additional honey, if needed
