Warmer weather means a change in the types of foods that my body craves. Gone are the yearnings for warm comfort meals of soups and stews. Now, I want fresh crisp salads and beautifully grilled proteins. This gorgeous, tangy dressing made with an assortment of fresh herbs is the perfect way to welcome in the spring.
I had some leftover steak in my refrigerator that I added to my salad for a quick and tasty dinner. It would be equally as good with chicken or shrimp.
Fresh Herb Salad Dressing
This dressing is a wonderful topping for your salad, whether it is a side salad served with dinner or a main dish salad with added protein.
Ingredients
- Approximately 1 cup of fresh herb leaves (I used basil, parsley, chives, and oregano).
- 2 cloves garlic
- juice of one lemon
- 3/4 c. sour cream
- salt and pepper to taste
- 1/2 t. honey
Instructions
- Place the herbs, lemon juice, garlic, sour cream, and honey into a food processor and blend until smooth.
- Taste and season with salt, pepper, and additional honey, if needed
